BEER  Brasserie Dupont Moinette Blond

Brasserie Dupont is the brewer of one of the world’s most iconic beers: Saison Dupont. The word “iconic” is even more overused than “artisanal,” but in this case, it’s true. Saisons/Farmhouse Ales are a Wallonian (Wallonia is the southern, French-speaking part of Belgium) originally brewed in springtime for all-summer-long consumption by farmers. Saison Dupont is the benchmark beer of this wide-ranging and wonderful style, which is at once effervescent, refreshing, complex and food-friendly. This stronger and rarer Belgian Strong Golden Ale from Dupont, however, is considered the showpiece of the brewery. That's no small feat. We love this beer, and this beer loves cheese.

CHEESE Seahive

Seahive is a unique cheese made in Utah by Beehive Cheese, a company created by two brothers-in-law who left their corporate jobs to pursue their passion for handcrafted cheese. In 2005, they traded in their laptops for paddles and milk vats, and eventually they became award-winning cheesemakers. Beehive is best known for Barely Buzzed, a cheese rubbed with coffee grounds and lavender, and Seahive is the company’s follow-up. The rind is rubbed with honey and Redmond RealSalt, both harvested from Utah. To us, Seahive is ideal for August. It’s a breezy cheddar-style cheese with a hint of sticky shore weather.

COCKTAIL Oaxaca Old Fashioned

The Old Fashioned has earned its name as it is considered the original cocktail. While most associate this timeless libation as featuring whiskey, bourbon, or other dark spirits, the first Old Fashioned was likely mixed with a jigger of gin. Essentially if it was a spirt-forward beverage with the addition of bitters and sugar, it was considered a cocktail. As time passed and the number of cocktails grew and grew, the easiest way to get this traditional cocktail was to pick a spirit and order it “Old Fashioned.” Our modern Old Fashioned, if you will, showcases Cimarron Reposado Tequila and Wahaka Mezcal, both traditionally made Mexican spirits. The sugar component comes courtesy of agave syrup, and the finish of traditional Angostura bitters and an orange peel make for a smoky, sweet sipper with a pop of citrus.
